Santo Domingo Bittersweet Paprika
Bittersweet smoked paprika, or pimenton, is ground from long, fiery red peppers grown in the Extremadura region southwest of Madrid. The spicy-sweet paprika peppers are oak-smoked, infusing them with woody notes, and then ground in stone mills to keep temperatures low and help retain natural flavours. The bittersweet distinctive flavour of this paprika has earnt itself DOP status (Protected Denomination of Origin.)
Also known as ‘agridulce’ paprika, Santo Domingo bittersweet paprika is delicious in traditional paellas, as well as being a vital flavour in home-cured chorizo, and a delicious flavour in grilled squid, chicken and halloumi.
