Valdeon Picos Blue

Valdeón Picos Blue is predominantly made using cows’ milk which is then blended with goats’ milk to produce a crumbly soft blue cheese. It is then wrapped in maple leaves as it matures. When the leafy exterior is removed prior to eating you get a wonderful earthy aroma with a hint of vanilla and tobacco. The cheese itself has flavours of chocolate and roasted meats in amongst its savoury tones.

Valdeón is protected by its PGI status which means it can only be produced in the Posada de Valdeón, a province of León in Northern Spain. The cheese is also known as Picos de Europa after the mountains where it is made.

In the 19th Century Valdeón Picos Blue was made by shepherds using goats’ milk in huts high in the mountains where they tended to their animals. They would then mature the cheese in the mountainous caves.

This cheese can be a bit salty and so a fruity cider is the perfect match to balance out the flavours.
